a chef's walk - mexico pampanga









































When you say Pampanga it has always been fontana, clark or mimosa. We had a different trip last thursday august 20. the trip was called 'Viajeng Cusinang Matua' a food tour in private old houses in Pampanga.

Our first stop. Kapampangan Heritage Pastries. Their specialties; 'dulce prenda', 'Panecillos de San Nicolas' (San Nicolas cookies) and Angel's delight.

San Nicolas cookies their specialty cookie in Mexico. It is made of flour, butter, carbao's milk, sugar, egg yolks and dayap rind. ingredients are combined together. Kneaded and molded in a Yakal wood, carved with different designs.

Dulce Prenda. Same recipe but with kundol in the center. It is like 2 doughs layered together with kundol filling.

All pastries are baked in in a claypot oven - 'bibingka style' charcoal on top.

The owner, Atching Lilian Borromeo - Pampanga's foremost food historian entertained as well and even did a cooking demo how to make San Nicolas cookies and Dulce Prenda - my favorite.

She has also a lot of collection of old cooking equipments. I took a photo of one 'talyase' it is like the Chinese wok of today.

It is nice to know that there is a tour like this that you can go back in time to exlplore the heritage of our cuisine.

next in line breakfast..... yes! they did prepare breakfast for us :) a lutong bahay Kapampangan breakfast!
